I have a video that shows turkey mounting and in the video, the instructor takes the time to cut the ball off the thigh to clean out the marrow, but does not do this on the wings. Wouldn’t that be just as important? The wing bone that attaches into the breast is about as big as the thigh. Am I making too much out of this?

The wing bone you are talking about does not have enough marrow in it to worry about. It is important that you clan out the other wing bones though.

Ditto. The only birds you need to worry about with the shoulder bone or humerous, is on sea ducks and divers. The added weight lets them dive easier. Puddle ducks and upland have no marrow in their humerous. Although they do have a vein in the top of the bone under the ball, and sometimes blood will get trapped in it. And like Aaron said, you do need to clean out the ulna, radius and with big birds, the last digit past the wrist.
