I have a salinometer to measure the salt concentration of my pickle solution. What should the ideal concentration be? At what point do you need to add salt to be safe? I am not trying to skimp but at the same time, if more does not make any difference, why waste salt! Thanks for the answers.

Are you putting salted skins in or green skins in the pickle?

Somewhere in the 15 to 20% range should be sufficient.

The rule of thumb is usually 1 pound of salt per 1 gallon of water.

I salt them first for two to three days and then place in the pickle. I then make up the pickle with at least a pound of salt per gallon and add Bruce Rittel’s Saftee Acid. I am just trying to figure out what the reading should be. Thanks.

It should read 20%, if your putting salted skins into a pickle you may not need 1 pound of salt per gallon of water
