Your options would be freeze or salt. Fleshing and stretching would be out for a animal if you wanted to mount it. I would say lay out flat to chill hide the roll up and freeze or completely flesh and salt. But if you are going to use dp to mount then you are back to freezing

On the raccoon and opossum I would tan them, either send out to a commercial dresser or in shop, the squirrel I’d just powder preserve it, I know tanners aren’t supposed to suggest that, but you’ll get a better tail if you powder it.

I tan everything myself, even squirrels.  Whiskey, I don’t know about that rolling them up and freezing.  It that works for you, so be it!  It takes longer to freeze and thaw if they are rolled up tight.  If I need to freeze I lay them out flat and fold into thirds lengthwise and put them into a bag and seal.  They thaw much faster that way.  My procedure and that works well for me, but we all have our own ways.

I store several pelts and hides like this. It takes up much less space. I bought fur for years and stored extra pelts this way. Chill to a almost frozen state then roll. I have done this with several hundreds closer to thousands never had a problem.
